Tom Sivilli makes FLAT OUT, OUR FAVORITE DOMESTIC BUBBLIES we’ve ever tasted - in fact, there's nothing even close. We love, love, love authentic Champagne, and these compete favorably against Blanc de Noirs Champagnes costing $70 -$150. My personal cellar is filled with great Grower Champagne and these domestic sparkling wines will join them.

While owner John Paul is the captain of the ship at Cameron Winery, Tom Sivilli is the day-to-day winemaker at Cameron and has been been perfecting the art of sparkling wines with his own project, Sivilli Wine Co. With these three sparkling wines - his forth ever releases, Tom has proven himself to be a damn sparkling wine savant. Who would have expected impeccably balanced, super complex bubbly from the Willamette Valley? These are the real deal. All three were made in extremely small quantities, so don’t delay. B.T.W, the labels have been updated, so they may not be recognizable to you if you’re familiar with past vintages.

$45.99 bottle / $245.95($40.99) six-pack This bubbly is so good!  Sourced from four acres of original, own-rooted 1980 Wädenswil Pinot Noir vines and made by Tom Sivilli, how could it not be? Temperance Hill, being one of the crown jewels of Oregon viticulture, these un-grafted old vines have spent over four decades driving their roots deep into the volcanic basalt bedrock. With yields of about one ton per acre, this wine has power, complexity and real flavor authority. Aromas of apricot, dark plums and brioche entice the senses.  The palate explodes with base notes of freshly baked pear tart, hood strawberry and a bunch of other stuff.  This bubbly just envelopes the palate without any heaviness. This beats the merde out of most $100 Blanc de Noirs Champagnes.  Almost endless food parings like tarts, quiches, Charcuterie, especially prosciutto di Parma, any kind of poultry or water fowl you can think of and on and on. $45.99 bottle / $245.95($40.99) six-pack 100% Pommard clone Pinot Noir from a great Dundee Hills site. Notes of toasted hazelnuts and tarte tatin segue the palate which features a distinct red raspberry inflection, providing an excellent structural weight and vibrant acidity that makes this sparkling wine versatile enough to stand up to richer, heavier dishes. The long finish leaves a lingering impression of roasted nuts and a reprise of the raspberry fruit. This wine is ready to play - let’s go! Dosage 2 g/L

Sivilli Wine Co. 2022 Blanc de Noirs Abbey Ridge

                    $45.99 bottle / $245.95($40.99) six-pack This is a blend of 66% Pinot Noir & 33% Pinot Meunier (yes, Meunier!) from one of Oregon’s greatest vineyards - Abbey Ridge.  This sparkling wine manages to show the terroir of Abbey Ridge and the fruit profile of Pinot Noir and Pinot Meunier - a grape variety with unique and beguiling spicy varietal expressions. While 66% Pinot Noir, it’s the Meunier that dominates the hauntingly complex aromatic profile (hallelujah!) The palate is coiled and takes a few minutes to start to open up with beautiful fruit from the Pinot Noir and savory and spice notes from the Pinot Meunier.  The mouthfeel is rich and plush with a caramel note popping in to add nuance.  Already delicious, this wine will only improve over the next seven to ten years. Holds its cards a little closer it its vest, but it has a winning hand. Dosage- 4 g/L.  Merde sérieux. Very limited.
