Kohryu "Ruby Dragon" Daiginjo Shizuoka Nakadori Genshu

After brewing, the precious sake is separated from the spent rice through gravity only. There is no squeezing or pressing which would increase yield but also bitterness. Only the middle of the batch is bottled here and sent mostly to competitions. One of the best Niigata sake ever made.
