100% Cab Franc goodness.  Okay, what’s going on with both “Domaine” and “Chateau” in the name of this wine?  Well, the name of the winery/estate is Domaine Filliatreau and Chateau Fouquet is a property in Brézé that the domaine bought back in the 1990s and has been farming and making this single vineyard wine from ever since, in addition to their other bottlings. Classic Cab Franc aromas supported by fine tobacco leaf and earth aromatic fireworks join the savory palate with pure fruit, great balance, and lots of terroir-action. Perfect brasserie red - pass the steak frites!  "The 2021 Château Fouquet bottling from Domaine Filliatreau is an excellent, young Saumur. The wine is impressively ripe for a 2021, tipping the scales at 13.5 percent octane and offers up a lovely mix of red and black fruit in its aromatic constellation of cherries, dark berries, cigar wrapper, juniper berries, a lovely base of tuffeau soil tones and a topnote of bonfire. On the palate the wine is bright and very precise, with a good core of fruit, fine soil signature, tangy acids and excellent balance on the long, complex and ripely tannic finish.
