2016 Ch. Simone, Palette Blanc, Provence $59.89 bottle / $341.94($56.99) six-pack
Located in the hamlet of Montaiguet, just southeast of Aix-en-Provence, the tiny Palette AOC is one of the smallest in France, and even as a small independent producer, Château Simone produces a majority of Palette. Chatreau Simone is famous for issuing chiseled, cellar-worthy whites that are defined by their power, elegance, balance, and detail. The 2016 Simone Blanc is comprised of 80% Clairette, 10% Grenache Blanc, 5% Bourboulenc, 3% Ugni Blanc and 2% Muscat from old vines on a north facing slope of limestone on the property. Initially quite reserved aromatically, the nose slowly opens up with time in the glass, or better yet, a decanter. The palate offers textural density without seeming heavy while conveying a real sense of energy and underlying minerality. At this point, the fruit is still fairly restrained and taking a backseat to the wine’s gout de terrior, but starts to come alive with aeration. While a delight to enjoy now, the 2016 Palette Blanc will improve in a cool cellar for years to come. Enjoy with all manner of seafood like lobster, prawns, scallops, clams and white-fleshed fish, or pair with poultry and pork dishes for a culinary and vinous feast.

2017 Dom. de Montbourgeau, L’Etoile Cuvée Spéciale, Jura, France $45.89
Geek alert: Domaine de Montbourgeau has produced traditional Jura wines since Victor Gros, the grandfather of current vigneronne Nicole Deriaux, first planted the estate’s vineyards in 1920. This elite cuvée of Chardonnay is Madame Deriaux’s special selection from her best Chardonnay plantings. It is left to age “sous voile” for 56 months in barrel without racking and without topping off. While Vin Jaune is always made with 100% Savagnin and aged in barrel without ever being topped up for seven years, this Chardonnay is made the same way except that it’s in barrel for a little under five years and while is shows some of the beguiling oxidative notes of Vin Jaune, it is much fresher and vibrant. The traditional Jura method of "sous voile" (with the veil) style is where the wine ages in barrel under a veil of naturally occurring yeast which both enriches the wine with an unmistakable tangy, nutty aroma and flavor while protecting it from spoilage while it ages in barrel. The result is an amazingly intense nose of freshly roasted hazelnuts with an equally intense palate balancing dried apricot, tangy acids and a kaleidoscope of spices. Go nuts enjoying this amazingly complex wine with braised pork, sausages with lentils, roast chicken with cream and morels, or duck and potatoes dauphinoise! Intriguing and super-delicious now, this wine will gain in complexity and age effortlessly for many years.

2019 Ch. Moulin de Tricot, Margaux, Bordeaux $55.99
This is really serious Margaux - yes, a big hitter Bordeaux, that has somehow escaped the insane skyward price spiral of most other high-quality Bordeaux. Margaux is widely considered to be the most aromatically complex and elegant of the Cabernet -based left bank appellations and Chateau Moulin de Tricot is a shining example. Savory aromas of blackcurrant, plum, violets, tobacco leaf, graphite, cedar, and forest floor erupt from the glass. Moulin de Tricot has produced yet another truly classic and traditionally styled Margaux. This wine is all about elegance, class, finesse and structure; there are no jagged edges or dropped stitches of any kind. It’s a perfectly detailed and sublime wine. The tight-knit layers of tannin, the long and sonorous finish, and the impossible silkiness and luxury on the palate—this is a profound, sophisticated and powerful wine that expresses every once of the legendary Margaux terroir. Drink over the next 20 years.

2019 Domaine d’Henri, Chablis 1er Cru, Fourchaume $42.99 bottle / $233.94(38.99) six-pack
Domaine d’Henri has been quietly issuing great Chablis for years at very friendly prices.  Luckily for us, hotshot sommeliers aren't posting Instagram shots of d’Henri - thus driving demand and prices into the stratosphere (i.e. Raveneau & Dauvissat).  Aged in neutral barrels, the 2019 Fourchaume possesses intensity, richness, density, and serious mineral expression.  This is pure, concentrated, expressive soil-driven Chablis with great texture and the ability to please now, or reward your patience in the cellar. A serious deal for Premier Cru Chablis and so much better than big negociant Chablis.

2021 Domaine Vocoret, Chablis 1er Cru, Cote de Lechet $34.99 bottle / $191.94($31.99) six-pack
If you're a fan of classic Chablis with plenty of verve and minerality, this is the ticket.  After the torrid 2020 summer, 2021 is a return to a much more classic Chablis vintage which highlights Chablis’ inimitable mineral expression that is so site specific. Briny aromas of oyster shell, chalk, lemon curd and lime segue to the nervy palate that offers a pleasing tension between Meyer lemon fruit and its strong core of minerality. A pleasure to drink now, this scintillating wine will gain in complexity and evolve beautifully in a cool cellar for another five to eight years.  Compared to other Premier Cru Chablis of similar quality, the Vocoret Cote de Lechet is a steal. Reminds me of a 1990s era Dauvissat La Forest.
